In this case a full height Cottager's clock from around 1800 with a 30hr movement. Lovely thing with a sporting scene rather than the usual gold face. It strikes every hour the correct number of chimes and that's the problem. Anyway to get these things to mute at night other then taking the weight off to stop the clock?

Take the battery out?

My parents had a clock of a similar age and I don't think there was anyway of stopping the chimes....

Some clocks have a lever for night time to silence them.

We have a Grandfather clock from around 1780 in the hallway and it strikes every hour on a bell, it never wakes any of us up though and it can be heard throughout the whole house.

Either stop the pendulum, or take it to a clock repairer / restorer.

It is possible on some mechanism types to add a lever to clamp the hammers against the bell / gong. I think you need a damper on the striker to be able to do this. I could of course be talking complete twaddle. I think your best bet would be to find a local BHI member who does repairs and give them a call.
