From my current collection it would be:
Dress:
Omega Geneve - My first "decent" watch, and one I will never sell. Recently serviced, but I asked them to keep the patina on the dial, as it really shows the age of the watch - looks great imo.
Sports:
Tissot Sea-Touch. Slightly drunken purchase made at a watch event with free Champagne while I was holiday last year. It's great for diving though, sapphire crystal means no worries about dings, and I love anything orange. As I wear my watches on the right wrist, I have to wear something lighter when playing racquet sports though,
usually a G-Shock:
Daily:
Tag Heuer F1
It's got some knocks and dings, and it's quartz, but as a watch to just pick up and go with, it's usually my default choice. Very close run with my Seiko though - but I don't want to ding the Seiko as I like it too much!

If could have anything though, and things that far exceed my modest means...
Dress:
Might as well go the whole hog with a limited edition Ulysse Nardin. And yes, that is nearly $100k's worth of watch on my wrist.
Sports:
It'd have to be a green Rolex,
although I do really like the old Heuers too...
Daily:
Sinn 556 - Love the simplicity.

Guys just say you could only keep three of your watches that fall in the following categories. Dress / Holidays sports etc / Daily beater you are not afraid of scuffing.
As far as I am concerned, that's two. I wouldn't consider a holiday/sports watch one that wasn't a beater. It's hardly a sports watch if it can't take a graze or knock or two unless your sport is golf, walking or darts (or whatever else an old git like me is supposed to do... chess?).With that in mind, the dress watch out of my collection would be either an Omega SMP (2254.50) or Sinn 556. The sports beater would be the Breitling Colt (quartz) on a Nato, obviously, or Casio Riseman, again on a Nato, obviously. Funny thing is, I'm such an addict that I can't even narrow the selection down to the 3 you specify.
Anyway, some pics:
