selling watches privately

Looking at some of the watch companies like Chrono etc , for a private seller, The process seems to be geared to the purchaser ie :

You have your watch valued , You list your watch , The Buyer agrees price , He sends money which is kept in an Escrow account , You send watch securely , You wait 7 days for payment . but then there is a 14 day money back guarantee ?

How does this work if you are a private seller
