Evening everyone,
After years of various Tag watches I’m looking at taking the plunge into something a little more exotic. My options so far are an Omega speed master moonwatch or a Rolex sub (non date). Happy to be on an AD waitlist for the Rolex so no issue there. Really just looking for opinions from people with more knowledge than me….thanks

I have a Speedmaster 50th and have had Rolex subs, both date and non-date. To be honest, there is no answer to this really. They are both lovely watches but very different. The speedy is a chronograph and a sub much simpler two hand model. Basically, they are both superb design icons, I think you'll be delighted with either. After years of various Tag watches I’m looking at taking the plunge into something a little more exotic. Id personally prefer the omega to the rolex i think.
If looking at those types of watch (sporty/more casual/diver) I'd also be looking at:

Omega was the first 'big boy' watch I bought (from having a TAG).
Loved it and cannot fault it.
Got a Sub a few years ago (date) and it is nice, but in all honesty, I think the OMEGA is just as good.
Ultimately it's down to opinion. How about you get an OMEGA and by the time the ROlex AD offers you one, it'll be a good time to add to the collection.
But overall, you should try them to see what feels right for you.
(I have a Grand Seiko as as well, and it i nice, not sure I like it more than the other 2)

I was looking at what a significant upgrade could be for me at various price levels. Surprisingly, Omega just didn't win out for me.
At £4k I like... Breitling

At £5k I like... Bretiling

At £6k I like... Breitling

At £7k I like... Breitling

I just really surprised myself there! I have a vintage Omega handed down from my grandpa so always wanted to work up to getting myself one, but they just don't stand out to me really. To be honest my favourite is one of their cheaper ones...

Subconsciously or consciously, you have picked the most hyped entry level watches, one from Omega and one from Rolex. After years of various Tag watches I’m looking at taking the plunge into something a little more exotic. The omega will be walk in and most probably with some discount and the Rolex, will be wait list but those lead times are reducing.
If you want to take the plunge into something 'a little more exotic', then Omega and Rolex do a wide range of watches at those price points. No need to limit yourself to the moon watch and Sub.
The Omega SMP300 is the direct competitor to the Sub.
FYI, the Moonwatch is a manual movement not automatic, so will require handwinding every couple of days.

Sorry OP..!
ETA: the GSs above are old - mine is a 2013. Since then the branding has separated so that Grand Seiko is distinct from Seiko (think Lexus vs Toyota).
The dials on the divers have also been brought in line with the amazing finishes you see in the sports and dress watches. For example (ref SLGA023):
