I want to learn more about automatic movements.

Where is the best place to source 'old beaters' to take apart, learn how to fix etc.

I would quite like to be able to 'blow the cobwebs' out of old, non working watches for a hobby.

Dare I say it?

Cheap fakes have base Chinese movements, pricier ones have ETAs. No, they are not Swiss but made in China, but learn how to service any of the 'clone' ETAs and you'll be able to service a Swiss real one.

Probably best to start with a basic handwind though. Have you checked out the TimeZone Watch School?
