I heard it overhead around 14:00 in Worthing as well, but couldn't see as I'm inside at work.

The clue is in the word touch!

A 'touch and go' is Civie speak for a 'Roller'.

What you describe is a low overshoot or 'go around'.

In which case, I stand corrected. I was under the impression that the procedure, especially in learning to fly, didnt actually touch the ground so as to avoid landing fees

The yanks never actually touch though unlike us Brits. I was told many years ago the reason why but can't remember right now.

In air traffic speak we call it a PD - Practice Diversion, then leave it up to the pilot to state his intentions when he arrives.

Much Like Vera's go around after first pda practice last year.... never seen our lanc thrown around as low as that!!

When I learnt to fly it was the 'touching the ground' bit that needed the most practice.
