I've got 10 oz /300g of chicken breast pieces in the fridge for this evenings nosebag.

Anyone any suggestions for a bright cheap easily prepared recipe to use?

Coat thoroughly with a simple coating of flour, salt and pepper, then fry in a pan with about two inches of oil, turning until golden brown and cooked through.

Saw it on Man vs Food this morning, looked delicious wink

Rub oil over chicken and sprinkle with cumin or piri piri grill then plate up with a bit of salad, costs very little and takes no time at all.

How about making a roux, add chicken and some mushrooms to make a pie.
Great with some mash and veg.

My post above is referring to whole chicken breast pieces, but if you mean diced chicken breast, then it could be a bit dry after cooking like that. So you could add a sweet and sour sauce and serve with rice.

Same as cal 72's really - buy a jar of cajun spices or lemon pepper. Sprinkle over the chicken an hour or two before you cook it and either sear it in a very very hot frying pan with minimal oil (couple of mins max each side) or in a very hot oven.

Serve with salad with a fruity dressing - mango /orange / lime juice based one, again easily bought but not that much of a pain to make.

Not much, but the shop is just up the road, so most basic things could be obtained.

Chicken is basically the form of sliced breast, and other haphazard sized pieces. Treat as diced , perhaps best I suppose.

Seasoned flour with a healthy tablespoonful of tarragon in big bowl. Dump in chicken bits, ensure all bits covered.

Fry in hot pan until golden, bung in oven to keep warm whilst you make a quick risotto with finely chopped onion, crushed garlic and a pint or so of chicken stock (an oxo cube will suffice). Whilst you're waiting for the last of the stock to be absorbed, chuck in the chicken and a handful of asparagus tips.

Delicious and quick (about 30 mins end to end inc. prep) and you have green wee in the morning.

What's not to like?

Go portugese with them:-


Oregano
Cracked black pepper
2 No Deseeded thai chillies
Crushed garlic
Hot caynee pepper
Red wine vinegar
Olive oil

Mix it all up, cover chicken in it and cook on griddle/ grill /bbq

Thanks everyone, I ended up using several bits from the different ideas....involving a long lost can of cook in sauce found lurking at the back of the cupboard.

It looked like something the dog honked up, but it was delicious! thumbup
