I was planning on a jamabaya but my guest isn't keen on heat and a jambalaya without it just isn't cricket so Im thinking cod..



As you have previously helped me with my moist chicken which was well received It makes sense to tap you guys for some more inspiration.

I have loads of cod ranging from 8 to 12 ounce. Ive made my share of cod pies and the like so I'm llooking to have ago at testing my capabilities on something more dishey (?)

Cod loin wrapped in parma ham

Wrap the cod in the parma ham. Drizzle with oil and wrap in tin foil. Place in the oven at 180c for 20-30 mins.

Thanks Sherman, I like the sound of this, I think Tony suggested this on the other thread. was looking to try a different execution to the wrapping as I done this last week and it's the same guest wink

Fish goujons (fish fingers)

Cut the cod in to strips. Flour, egg and bread crumb the strips. Deep fat fry until golden.
Serve with home made chips and mushy peas.

sounds great but a little too close to home.....I own a chippy hehe heaven forbid I outdo my shop ha

I've got a couple of fishy fallbacks:

white fish steak with herb butter on seasonal vegetables. Its kind of how it sounds. Just gently fry the fish steak with challotte and herbs, and serve on top of good asparagus and beans. Use plenty of butter. a few taters on the side, and a green sauce made from herbs in the food processor mixed with some butter. (spot the running theme?)

chinese steamed crispy fish. Whole fish, head on. Steam it (i dont know how big your cod is, but its usually about 15-20 minutes) with shredded spring onions, a chilli and lots of ginger. Plate the fish, then heat peanut oil until nearly smoking in a small pan. Drizzle the hot oil over the fish and it will crisp the skin and onions. drizzle the sizzling dish with soy sauce and sesame oil. serve with rice and stir fried chinese leaves.

Quite keen on this one myself:

Pan Fried Cod with Mediterranean Flvours

Very simple (the only real 'cooking' is frying the cod!) but very tasty and looks relatively flash for the work required - just use a good quality olive oil as I think a poor one can really ruin the taste!

Fishackes, it also works well in Thai or Indian curry.

Thanks for all the suggestions. Definitely will be trying them out at some point...

I think I'm going with a hearty but delicate Cod Wellington served with new pots and asparagus.

What sauce do you suggest?
