My mate and his wife are coming around the weekend for dinner... He is a fantastic cook so I want to do something that's a bit special... his wife is a Veggie so I need to take that into consideration, but I don't want to do a Veggie meal for everyone. no one likes fish.

Any suggestions to a starter, main and desert?

Yes.

Roasted tomato, pepper and chilli soup OR feta, pepper and red onion parcels with tomato chutney to start.

6-hour lamb shoulder with a herb, garlic, chilli and cumin paste marinade, served with vegetable, nut and sultana cous cous, flat breads and chutneys.

Caramelised onion tart in place of the lamb for the pain in the arse veggie lentalist.

Someone else will do a better job on dessert than me.

I recently cooked the following for my friends:

Starter: Baked Camembert, stuffed with rosemary and garlic, warm ciabatta and balsamic vinegar and extra virgin olive oil.

Main: Steak, Guiness and cheddar pie, cooked with roasted new rosemary and sea salt potatoes and green beans - Optional Goats cheese and caramelised onion tart for the vegetarian.

Desert: Homemade apple pie, with fresh custard and cream, complete with chocolate-dipped strawberries.

Mmmmmmm.

Could you do some sort of en croute for the veggie dish - I am not veggie but had a delicious veggie main at a wedding the other day - it was goats cheese and spincah in puff pastry.

Mushrooms in a white wine and cream sauce are also lovely with puff pastry.

Or grilled mushrooms with garlic and stilton - also works really well on a BBQ

otherwise what about a risotto - something summery like pea and mint (you could serve with chicken for the meat eaters)

A cold starter or soup so it can be prepared in advance.

Long-cook main course, again so you are not faffing around when your guests arrive. Leaves you time to drink and chat rather than slaving over frying or grilling something

Dessert, same applies.

Pferdestarke has pretty much covered the best of these.

For dessert I would do my world famous* steamed syrup sponge. Take 2 hours to cook so not much to do after main course but serve it. I got the recipe from my Pudding Club book, awesome!

* pudding may not actually be famous.
