I have been given enough broad beans to feed a family of four for two weeks. Any ideas for sauces to go with them, other than parsley sauce, I cant stand that.yuck I'm also thinking of blanching some of them and freezing, but must admit I do prefer them fresh. Any recipes please?

I like to sweat off (without colouring) a little sliced onion, then get the pan hot, chuck in some blanched beans and peas, the a splash of white wine, finished off with a little double cream and chopped thyme.

Oooh yes that sound good, will try that one tonight. Thank you. Do you think it would work with creme fresche?
(Double cream gives me a migraine.)

Steamed and peeled, with a sauce comprising 1/2 tsp toasted cumin seeds, 1 chopped green Thai chilli, a few finely chopped mint leaves, 250ml wholemilk natural yogurt, and a pinch of sugar to taste.

Or just steam the beans, peel and toss with frazzled bacon/chorizo, olive oil, flat-leaved parsley, and some red chilli / lemon zest.

Yes, definitely works with creme fraiche, just don't get it too hot or it will split.
