Having a home made anniversary meal tomorrow- pictures to follow of course biggrin

main course is herb encrusted rack of lamb with fondant potatoes, but need an idea for veg.

have got some carrots with heads still on, some baby leeks and some fresh baby spinach.

how do i prep the above to make them look well presented and make sure they taste brilliant. Would like to keep the leeks whole, but can't quite work out how to do that!

For the leeks, blanche them in boiling salted water for about a minute tops, then plunge straight into iced water and drain, then leave on kitchen roll until you are ready for the main course. Then toss them in olive oil, salt and pepper and cook on a hot griddle pan until stripy.
