Smoking on a gas BBQ
Discussion
In youthful exuberance a few years back I went and bought a large gas BBQ. Now yes I rue the day and realise the error of my ways and wish I'd bought a Weber, but rather than go and splurge on one, I wondered what successes people had had using the small boxes to hold chips that you can use on a gas BBQ? Worth giving it a go?
have smoked very succesfully on a gas BBQ- if its a good one with 2 burners then it works amazingly well.
I made sure that it had loads and loads of colas (which had been well used), turned on one burner on very low- filled up a double foil puch with wood chips and water, and laid a leg of lamb on the other side.
5 hours later it was cooked to perfection. So whacked up the BBQ to extremely hot and cripsed the outside up.
it was perhaps the finest food i've had!
am tempted by a proper smoker, but as it was, the gas did exceddingly well

I've modified my smoker (essentially an oil drum BBQ) so that it can be ran on either charcoal or patio gas (via a removable paella burner).
It's nice to run it on charcoal but I find the ease of running it on gas wins if I have to make a choice. The smoke flavour comes from the chips anyway so there's not a huge difference. I soak them for 30 mins then put them in a roasting tin above the gas flame.
The pork ribs, brisket and beer-can chicken produced so far have been very tasty.
