Spaghetti alla carbonara sauce question

I am making a Spaghetti alla carbonara type dish tonight; same sauce but I'm adding mushrooms and Prosciutto instead of pancetta.
As far as the sauce is concerned, I sometimes put a little double cream in the mix to 'wet' the sauce up a little. The question is would creme fraiche work equally as well?

Oh I see. I simply tried to mix it in from cold with the egg yolks and parmesan cheese....it didn't work!
This works for meDrain nearly all the water from the pasta.
Immediately add:
- Straight of the hob bacon bits (or pancetta) with a little of the oil (hopefully you've put a bit of oregano in whilst frying as well)
- Some cheese
- Egg
Stir and serve immediately on hot plates - with some extra cheese
I find this tastes pretty authentic.
