I'm currently looking for interesting high protein meals with only a small amount of fat and carbs.

No I'm not on some kind of Atkins diet or anything, on the contrary I'm trying to gain weight. But on gym days it's better to fill up with protein in the evening instead of a massive bowl of pasta.

At the moment one of my favorite meals is a steak with mushrooms + other vegetables and a low fat peppercorn sauce.

What other meals like this do people cook?

Boiled chicken breasts are good. There's so many things you can do with them. The only limit is your imagination.

Tuna too, or any fish for that matter but I really like tuna.

I always have turkey, cheaper and tastier than chicken and IIRC a higher protein count

Do you mean non gym days?
No!

In the evening of a gym day if you eat fat or carbs your body will just burn that and your muscles won't repair themselves. By eating high protien you're getting the calories you need to live, your muscles will repair better and faster and most importantly your body will burn stored fat instead of the fat you just ate.

What do people do with said turkey and chicken specifically to make it tasty but not mega fatty?

That's where your herbs and spices come in. Throw some jerk seasoning on it and bung it in the oven for half an hour. Easy to cook and tastes good.

Not sure why you would boil chicken.

Marinade and either grill or stick in oven (220 degrees 20 mins is what the wife does iirc).

If find it dry to eat use some olive oil.

Quick and easy - I sometimes stir fry sliced chicken or turkey breasts with fajita seasoning, onions, peppers, coriander (if I have it) and lime juice, with salad, and yoghurt if a bit hot. Or coat some chicken breasts in a mix of yoghurt, lemon juice, curry poweder and turmeric, with salad. Finely chop some onions, and add mint and lemon juice for a dressing.

I must have no imagination then, because I can't imagine anything with a boiled chicken breast, other than to feed it to the cats laugh

Boiled chicken is actually very nice. Secret is not to over cook it. It is tender and can be used cold or hot in salads, wraps, by itself etc. You can make it taste really nice if you boil it in chicken stock. Then you can make a soup or freeze the stock you have left over.

This is not correct, as any nutritionist will tell you. You need carbs on workout days and lots of them. You will not gain weight without carbs and fat, as well as protein.
