Any good recipes for a decent marinade/sauce to cook them in.

Use honey . Helps stick marinade to the ribs and is very sticky and gooey smile
The rest depends on you and your taste. For me it would be garlic , ginger salt and pepper maybe a little garam masala

i use the following for my belly pork, works well in the oven or bbq (weber indirect)

chopped sage leaves, thyme (remove stalks), lemon zest, few bits of garlic and salt - mash up in a m&p
mix in a teaspoon of spanish paprika(hot) and then juice of 1 lemon, and finally a few glugs of olive oil.

i prefer to cook the belly pork ribs whole rather than individual ribs, so marinate the belly pork all over except the rind which i just score.

leave in the fridge overnight and then take out bring to room temp before cooking, kitchen paper to dry of the rind, add salt to scores in the rind and then season the rest of the pork.

oven 220 - for 1hr then reduce to 180 for a further 2 hours

works well!
