Recommend me a cookery course

As part of my 40th birthday 'celebrations' Mrs Madness has offered to pay for a residential cookery course and I think this is a cracking idea. I like to cook and am reasonably adept but not skilled if you get the drift. So does anyone have any recommendations??
I live up in Shropshire but work in Oxfordshire and would be happy to travel to the right place.
Not sure on budget as the Mrs would be paying but if you can give me an idea

I went on one to Eckington Manor http://www.eckingtonmanorcookeryschool.co.uk/ and enjoyed it a lot - I did the fish course which was very good.
They also do residential although I didn't stay. Should be reasonably close to you too?

I went with my missus, it was great.
Better than being shown how to bake a Victoria Sponge while it howls a gale outside I reckon.
