Anyone got any good BBQ (or other style) marinade recipes?

I made a cracking Ale BBQ stuff the other day, but I was making it up as I went along and forgot how I did it!

I'm going to try and re-create on the weekend, anyone got any others that are worth a try?

Natural yogurt
Lemon juice
Garlic
Onions
Ginger
Fresh coriander
Salt
A little honey
Chilli powder
Turmeric
Paprika

I use this with chicken and lamb

Main thing for me is to marinate over night rather than a few hours

A marinade for baby back ribs would be useful for me too. I love Tony Roma's Carolina Honey sauce but the recipes I have found for it include Ketchup. If that's what Tony Roma's use fine - I was oblivious - but having a Ketchup phobia I cannot make that sauce myself with it as an ingredient!

So any BBQ/Carolina Honey sauce or dry rub recipes?

Use Tomato Puree? and a teaspoon of sugar if it's not sweet enough, and a teaspoon of malt vinegar if it's not bitter enough?

i use this for my pork belly roast:

few cloves of garlic, lemon zest, sage & thyme leaves smashed up in a m&p, then add juice of 1 lemon and teaspoon of hot spanish paprika and then a few glugs of olive oil and mix all together.

i dont bother marinating the rind as it can effect the crackling so just marinate the meat over night.

This marinade may sound odd, but it's a winner with chicken, epecially breast chunks which would be dry otherwise:

Smoked paprika and rosemary marinade

200ml olive oil
1tbs spicy smoked paprika
1tsp finely chopped fresh rosemary
1tsp salt
1 grated onion

Mix together and marinate for at least 6 hours. Skewer with chunks of pepper and onion, or leave as is.

lemon, fresh garlic, olive oil, pepper and fresh oregano for souvlaki marinade, good on lamb, pork and beef. After 3 hours thread green peppers, red onions and the meat onto skewers and BBQ. OH loves this.
