Help, The missus has requested a key lime pie/ tartlet for her Birthday pudding.

I am keen to recreate one I had at the Wynn buffet in Vegas, but nowhere can I find the right recipe.

it was cheesecake based with a lime cheesecake middle but it had a jelly like electric green top.

Any ideas?

Never seen key lime pie with a jelly green top even when having it in restaurants in the Florida keys.

Do you want authentic with a Meringue top or the one you had at a Las Vegas hotel?.

Go onto the carnation milk website think its www.carnation.co.uk and look up their Key Lime Pie,its the DD's,made it last weekend for the TVR Waterski Event and everyone raved about it.easy to make as it has a biscuit base,not a pie crust which i think is nicer

Hmm, you could have a point, and the fact I cannot see what I want on google, would seem to validate your point.

I think I just want to re-create the vegas one.

Might try emailling the Wynn, and see what joy i get.

Also, key lime pie is naturally white / beige - not bright green as it sometimes arrives (food colouring)!

If you want the jelly top I would experiment with regular lime jelly mix. Use a lot less water than normal and see what results you get. Mix up different batches, leave them to set in the fridge and go from there. If you find one you like, make the cheesecake as regular, pour your jelly mix on top and let it set.

The hotel stuff will probably be some commercial type artificially flavoured and coloured gel, not sure where you would get that.
