Don't throw the spirit infused fruit away after you've finished making the drink!
They're great for making various boozy fruit flavoured desserts.
Chocolate covered vodka soaked damsons are particularly nice.
I've just chopped some vodka soaked plums and mixed them into plain chocolate, then poured into ice cube trays to re-harden.
Failing that, chop them, mix into sugar syrup and pour over ice-cream,
or mix with apples for a fruit pie/crumble that will get you pissed!

Very good advice indeed. I make both Lemoncello and "Orangecello" but freeze all the vodka soaked rinds for cooking with chicken. If pushed under the skin with some olive oil, honey, pepper and salt then pot roasted you will have the most fragrant of lemon chicken. Great in curries and chilli dishes aswell.
