Hi, have some venison rump and was going to cube it and do it in a stew, would 1 hour be too short for cooking time?

I'd give it longer - one for the slow cooker I think. Add some fatty bacon or pork belly for 'lubrication' as it will be very lean.

may not be of much use to you but with a cut like rump i probably wouldnt use it in a stew and would roast/ fry to a max of med-rare. but as MC says if you do decide to slow cook add some fattier meat in as well. I would braise very low and slow ~120 for about 3 hrs

I agree, I would normally pan fry it but wanted a one-pot for convenience. I will stick it in with some bacon and veg and hopefully should be ok.

I have some fillets as well but will definitely do those in the pan.
