OK all of you foodies here is a challenge for you.....

Its Christmas soon (as you all know biggrin ) BUT instead of turkey, goose or whatever you do what would you prepare for Christmas dinner if the main guest of honour was a strict vegetarian (not vegan so eats cheese, eggs, milk etc) and you were preparing a completely vegetarian meal (3 courses) for everyone that is special enough?

I'd give the veggie a plate and some secateurs and point them towards the garden.

I'd tell them that as we inevitably have to eat veg / pulses etc when we visit theirs, then they will have to eat meat.

My mother for years cooked my ex wife individual veggie meals and got roundly slagged off for taking the trouble, so didn't bother in the end, just bought some crappy tv dinner.

Lots of veggies in our family. Last time we had a roast the veggies had a vegetarian Wellington with mixed veg and cheese in it .

A good nut roast as a main. Pretty difficult to get a good recipe as they normally end up too dry or too heavy. Try cashew nuts and hazelnuts as main part, with onions and breadcrumbs too. Could probably find you a recipe if you are interested.

Something like chestnuts, celeriac and onion slow roasted in a red wine sauce for an accompaniment.

Desert is easy for vegetarians; just have what everyone else is, not so easy for vegans. If this person is really strict, check that any dairy content is actually vegetarian, I guess.

Cook them a vegi meal then spray it with pork fat to enhance the flavour. Works every time for me smile

Sarter, Bloody Mary shots with avocado bruschetta

Main, Parsnip, Cranberry and Chesnut loaf.

Dessert, Figs with marscapone.
