Hi Gents

Just spoke to the old dear who was in charge of getting a gammon ham for christmas.

I asked how she was cooking it. She said it was cooked.

Is this the right thing, I thought you cooked them with cloves etc?

Thanks in advance

Must add, she says it looks like a bit of decent ham you would put in a sandwich. Is this just cured?

These days you can buy 'joints' of ham cooked and vac-packed.

I wouldn't worry.

Either. Smear some honey / marmalade / mustard on the outside if heating up.

Simmer it in full fat Coca Cola with a quatered peeled onion for just under 3 hours. Remove from the pan and let it cool for a bit. Carefully take off the skin but not the fat. Have your oven pre-heated to 220 C. With a sharp knife score the fat with a diamond pattern and liberally cover in treacle. Mix a tablespoon or two of mustard powder and good molasses sugar together and rub over the treacle. Then bake in the over for 10 minutes.
Yum.
Also skim off any fat from the cooking liquid and freeze until BBQ season. Makes an amazing sticky sauce.

I'm going to try this BBC Good Food recipe. Similar method & ginger beer sounds an interesting alternative to Coca Cola
