I am using a recipe of butter, cream, white wine and stilton. Is it a case of using more cream? Quantities are: 25g butter, 100ml cream, 60ml wine and 100g stilton.

I would:-

2 ozs butter
2 ozs flour
make a roux
stir in one pict full cream milk
crumble in the blue cheese.
stir still cheese melted.

As above, you need to add a starch to thicken the sauce. Starting with a roux is the best option or if the sauce is already made a little cornflour mixed to a lose paste with cold water added then reheated will thicken it up.

Cornflour is my go-to thickening agent. Saved me from watery sauce depression on numerous occasions biggrin

If you've already made it then you can thicken by blending together equal amounts of butter and flour then adding this to the sauce. Just add a bit at a time until the sauce is the consistency you want.
