Right, got shed loads of lovely turkey left. Got tonights dinner to consider.

Anyone got any ideas on some quick and tasty things i can do?

Leeks are, for me, the perfect companion to Turkey

turkey, leek & cranberry jelly croquettes
or
turkey, leek & cheese Quesadillas (Toasted sandwitches made in the frying pan with tortilla wraps then cut up like a pizza, or that's how I do them)
or
turkey with leeks done in a white sauce and placed on puff pastry which rises round about it.

I really love turkey/chicken sandwiches. Real butter, touch of salt and cheap white bread. Oh yeah, must have some crispy skin
in it.

HTH to gat rid of some.

Made a Turkey, leek, bacon and chestnut pie. Jolly nice it were too! biggrin

Don't forget that you can freeze the cooked meat. We usually have a huge turkey so I freeze half of the left overs and use them another time.

The turkey and leek in puff pastry sounds a lovely idea...

Well turns out we got fed at the mother in laws as we visited. All suggestions duly noted for tomorrow though.

I managed to turn leftover turkey into several litres of vomit and watery stools.

Do i win five pounds?

5 spice. Hoi sin sauce. shredded crispy turkey, and pancakes with cuecumber, spring onion.

Have you still got the bones/carcass? I boiled ours up for a fair few hours with plenty of meat still on the bone, strained it, added back the meat.
Then fried up one leaks, garlic and tarragon, added the meat/stock mix with red wine and worcester sauce, then added chopped up leftover roasties. Reduced for a couple of hours and serve with crusty white bread.

Turkey soup. Nom, nom, nom.

Strip carcass set meat aside. Boil bones with onions chopped. Strain and add chopped carrots a few more chopoed onions and any leftover gravy. After an hour add peeled potatoes , turkey meat and small packet paxo sage and onion stuffing. Simmer another hour and add bisto granules to thicken, darken. Dont knock this till youve tried it, luvly!

We didn't have turkey, but we did have loads of roast pork left

So, one huge mound of home cooked pork balls in batter with a spicy stir-fry did the job famously.

I think i'm swaying towards some sort of turkey and leak concoction with a nice creamy sauce with some white wine. Anyone got some recipes for this?

Sweat shallots, leek & garlic in butter until translucent, add white wine and simmer to reduce. Add creme fraiche or cream and simmer until you have the right consistency, season with salt and pepper, shred in the turkey.

Stick it in a pie, or spread it on a layer of puff pastry and bake it in the oven. Very simple.
