Flicked it on on +1 and missed the steak cooking so how did he do it?
Age steak out of the packet on a cake grille in the fridge for 2 days.Allow steak to come to room temp before cooking.
Smoking hot pan.
Only season steak with salt to start with as pepper will scorch!
Flip steak every 15-20 secs, middle of steak should be 45 degrees C for medium rare
Rest steak for 5 mins

Since watching Heston some time agoI have used a pressure cooker for dishes like stock, oxtail, ox cheeks etc and they are brilliant.
can you tell me this because it confused me.I thought the advantage of pressure cookery was to cook food at higher temperatures than unpressurised, but on the programme he said about cooking it on low. how does that work?

I guess he meant low pressure, on the pressure cooker he was using you can run it at two pressures. Meat is normally cooked at high pressure. The way you release the pressure affects the outcome as well.I thought the advantage of pressure cookery was to cook food at higher temperatures than unpressurised, but on the programme he said about cooking it on low. how does that work?
