i believe it is like white bread vs brown bread - all rice starts off brown, they just mill it and polish it to remove the (good-for-you) outer bit.
try googling around some japanese food blogs to see different types of rice and noodles, and what to do with them. There are restaurants in japan people go to just for different kinds of rice!

Brown rice is simply white rice that hasn't had the bran covering the rice grains removed. Bran is removed to make rice fluffier and cook quicker.
Brown rice will contain more fiber and nutrients, being a whole grain.
Fiber slows down the absorption of carbohydrates...which will help to tame a blood-sugar rollercoaster which can occur from eating a high sugar-low fiber meal.
Fiber also helps with cholesterol levels.

I believe brown rice is indeed better for you then normal white boiled rise if you are dieting but having tried it it is disgusting, however if you are dieting try Basmati rice as it has a lower GI rating.
