I've had these from the local curry house a few times and seem besotted with them. Does anyone have any good recipes for spicy Indian Koftas?

Here's my version of lamb koftas.

500g minced lamb
4 cloves garlic, grated
1 onion, grated
3 tbs fresh parsley, chopped
1 tsp salt

Spice blend for above quantities:

1 tbs ground coriander
1/2 tbs ground cinnamon
1 tsp ground cumin
1/2 tsp ground allspice
1/4 tsp cayenne pepper
1/4 tsp ground ginger
1/4 tsp ground black pepper

Mix, form into balls / around skewers, chill for 30 minutes before cooking. I eat these just as they are, with cucumber raita as a dip.

The spice mix is a bit of a faff to grind, so I make 2 x the amount and keep the remainder in a jar.

Interesting use of allspice there MC, does is add much to the flavour?

I think you'd miss it if it wasn't there.

I found the recipe on the net somewhere, and was a bit dubious about the spice blend intially. But, having ground it all together, it smelled 'right'.

This recipe is very spicy and garlicky compared with others I've seen, however I could still be persuaded to add green chillies to it, and maybe a bit of mint. Also play around with coriander instead of parsley.

As with burgers, make sure the seasoning is right. Easy to under-season.

-Chef's perk is to quickly fry a small splodge of the mix off for a taster.
