Oh , and the smell whilst it is in the oven is amazing. To all those that say vegetarian food is rubbish , try this.
Our lass is 75% veggie, so we eat plenty of it.Wednesday night was:
Coconut and thai spice curry, with calamari, red snapper, courgette, onion, pepper, chillis, parsnips, potato, and aubergine.
(proper use up tea) was awesome if a little "spicy"

What spices do you use and how?
The smell is just aubergine and butter .
Spices as per our usual curry
Onions
Garlic
Ginger
Tomatoes
Coriander stalks
Paprika
Turmeric
Cumin seeds
Coriander seed
Fresh chilli
Chilli flakes
Coriander leaves
I am sure I have left a lot out. In bed on phone , bit rubbish at posting on it.
Just treat it like Bombay potatoes once you have removed the skin. Alternatively you can skin it cold , chop it up and. Curry it as is. Add potatoes too .

Baked 2x buttered aubergines and 2x buttered courgettes. Then peeled/chopped into a thai green curry I made.

Everyone else adored the smell of baked buttered aubergine. Me, a bit too sweet

Bought a box of fresh aubergines , 14 total weight 5kg , for £7.99 . From an Asian supermarket . Hate to think what they would cost if bought individually .
Will make most of them into an aubergine curry and freeze into family sized portions
If you'd shopped at Waitrose you'd have paid £1 each Will make most of them into an aubergine curry and freeze into family sized portions

Even at Lidl they're 70p each.

my philosophy with most things in life is to go to the experts. the place i bought the aubergines from know their vegetables. they will sell more in a day than a waitrose branch would. i can assure you they were very tasty too.

My mums just come back from stoke with 11 mangos . She paid £1 ! They are not rotten or anything.
Just had one blended with plain yogurt and some milk. Mrs had one chopped up with black salt and lemon juice. Like I have always said , keep an eye on these Asian supermarkets .
If anybody is in stoke , the shop is al murshid , in stoke opposite Pak supermarket.

I've found brushed with oil, then griddled. Lather salt & pepper (chilli oil too) on them
