3 piece kitchen knives please

I am looking to get a set of 3 kitchen knives (can be individual too), as am really fed up using the cheap old blunt things we have. There are so many different sets and styles of knife available, can anyone recommend some they use please.

I treated myself to one of these over xmas, and I have to say, no other knife gets used in the kitchen now.

Whilst not cheap,wasnt hugely expensive either.

Its a joy to use as it is just so damn sharp, and it handles beautifully.

I bought a 'set' of 5 Globals (although it's always tempting to acquire more).

The one I use most often is the GS-5 'vegetable knife'. 90% of my kitchen jobs could be accomplished with that knife alone.

My advice would be to buy one good knife - and keep it bd sharp.

Using PH search throws up no reults for "kitchen knives" google will give you http://www.google.co.uk/search?q=site+pistonheads+...
What I would recommend is if you can get to a shop & actually get a feel for a knife then do so, what suits one person may not suit another.
(those Tesco ones don't look too bad!)

Thumb wink up here for globals as well, Costco have a decent set if you are a member.

Go for Global if your budget can stretch. 3 knives should cover pretty much everything you need to do. Interestingly, Which rate Global no.1 in their ratings of all knives across all budgets.

Why 3? If you're going to get good knives, you can do 99% of kitchen tasks with 2 - an 8-10" chef's knife and a 4" ish paring knife.

All about personal preference at the end of the day. Globals suit my (cack-handed) chopping style, but I had a go on a friends Wusthofs and was equally impressed with their edge.

@ the OP I wouldn't give up on the knives you have - maybe they just need a decent sharpener. I bought a 3-wheeled Minosharp ceramic sharpener which is a piece of piss to use and will sharpen any old knife. Cheapo knives from Ikea came up a treat.

True. The Global handles are very marmite and a lot of people don't like them. The other brands I mentioned are a good alternative because they have better steel with a more conventional handle stye.

Decent sharpening gear is a critical piece of the puzzle and will get even a cheap knife into good working order. The difference with better knives is that they will hold their edge much, much longer and can be sharpened at a more acute angle (= sharper).

As above, Global are good but you pay for the name.
You can get Damascus steel knives for the prices they charge.

I've got some Taylor Eye Witness... look after them and they will serve you well..... 12 yrs on, and still out perform mot mates knifes.. yes they are washed in cold water and run through a sherpener evry time before using..... but at the end of the day you pay for what get smile

Some interesting info here, cheers. I thought of 3 knives as quite a lot of the sets come in 3's and from reading an article somewhere on line they said you should be able to do every task with 3. If I can get away with 2 then so be it. The knife set we have at present is a supermarket special which I dont think would be up to the job even if they were sharpened to within an inch of their lives.

I like the look of the Global knives but as suggested it would be a good idea to go and handle some to see how the weight and feel of the handle fits in my hand. Just have to find somewhere close to Brighton to have a play.

I will take a look at sharpeners too as looks like this is a crucial piece of equipment too.

Steamer Trading (branches all over Sussex) sell Globals plus quite a few other brands, if there isn't anywhere in Brighton.

never a truer word!

after butchering my hands/fingers/wrists washing knives from the sink, i clean them instantly after using them by hot water and detol spray.

yes My brother bought me 3 one Christmas and I rarely use them because of the way the handle blends into the blade just where I want my thumb to be.
