Chinese "battered" food recipe

How do you make that "cantonese" style deep fried coating? as in swwet and sour cantonese or crispy shredded beef? have hte sauces down pat, but can't seem to get that authentic crunchy chewy texture to the coating......

deep fry floured meat, then stir fry in a wok with sauce.

I've made this a couple of times myself, and it turns out excellent. In fact everything I have made off that site has been great.
