Interesting article on "Ghetto sous vide" in the Times (section 2) today. Can't link to it as it's behind the paywall, but could be a good read for the sous vide enthusiast.

I read the article. it shows how you can effectively cook sous vide using a zip lock bag and a cool box.
Fair enough- you can do that for short cooking times but it won’t work well for anything over a couple of hours which is what I personally think the process is most useful for. For that you need precise temperature controlled heating which is a bit trickier.

I put together a 50 litre sous vide bath with very good (to 0.05°C) temperature accuracy for around $200.

Guardian readers using sous vide, didn't realised it worked for lentils!hehe

Me too although mine is only 25 litres and cost £70 to put together. how did you get it to 0.05°C accuracy though? the PT100 thermocouple that i am using only allows 0.1°C increments.

I work in a lab! A lab that does pressure, volume and temperature!

My temperature control actually does 0.01 degrees but It can only be accurate to 0.05 realistically. especially in such a big bath being circulated by a fish tank pump!!
