My take on cucumber raita:
1 tsp cumin seeds, toasted in a dry pan
250 ml plain yogurt
1/2 cucumber, peeled, de-seeded and grated
1 green chilli, finely chopped
small handful of mint, finely chopped
a pinch of sugar
Mix together and use as a dip for toasted pitta breads, crudites or lamb kofte.

If anyone has a salsa they make I'd like to hear about it. I took a quick look online and some used special tinned tomatoes, some cooked it, some used fresh tomatoes, very confusing!
I use the sweetest fresh tomatoes I can find, finely chopped to somewhere between the size of Dolly Mixtures and sugar. Then do the same with a red onion, a few chillies and some coriander, and mix everything together with the juice of 1/2 a lime and a pinch of sugar to taste.
You can make salsa in a food processor, but the texture is better when chopped. A bore, but there it is.
