Hi all,

Not usually one to resort to pistonheads to find out if I can eat my food but my nose/eyes are letting me down in this case as I almost never buy steak and don't really know what it should be like raw.

Rump steaks (cheap ones), bought on Sunday 6th so spent 9 days in the fridge in a sealed sandwich bag.

Smell a tad funky and slightly blue. Wanted to use in a slow cooker casserole but are they going to be foul?




Am I just going to ruin a nice casserole with slightly off beefy taste?

They look ok to me, I've cooked steak that looked worse. And if you are not planning on eating it rare anyway, then it will certainly be ok. smile

The outside of the meat is likely to be a bit tainted, mainly due to the blood spoiling in the plastic bag.

Wash it in vinegar before cutting/cooking. Should be fine.

Prolonged heating at over 80C will destroy any nasties.

Cut off any really smelly bits and give it 8 hours in the slow cooker with lots of spice.

I'd suggest a chilli, as it matters less if the meat falls apart.

My point of view (as a butcher) that what you have is
top rump steaks,not rump steak, they are very different.

The top rump muscle comes from the back of the leg, you know the one that sometimes
gets cramp after running and such like.
This is a well used muscle, and can tend to be tough,if brought from a supermarket.
I personally don't sell this meat ,as its not good enough for my customers.
That meat you have will be fine,if your in any doubt wash it in slightly salted water
this will bring it back to normal.

Interesting. Is it the 'coarser grain' that tells you this?

Yes and there is a seam of gristle/guthy running though it.

I heard this story too - also the claim that the further South in India you go the food gets spicier - apparently as the climate gets warmer then the meat goes off sooner so you need more spice to cover up the taste.

I put it to the test once with some clearly off chicken that I had in the fridge. The results were horrendous and clearly expose this claim as a myth - suffice to say I'm glad the car I was driving at the time had leather seats - I'd never have got them clean if they were cloth.

Prolonged heating at 80C will kill everything, and denature the toxins produced by Clostridium botulini.

That's the main one I'd be worrying about if meat has been sealed in a bag since it needs anaerobic conditions (absence of oxygen) to survive.

If the organism was present in the first place, of course.

Yes and there is a seam of gristle/guthy running though it.


Interesting and not a huge suprise. Bought from a butcher van at a big carboot sale for a fairly silly cheap price and it was sold as "rump steak". When I finally opened the bag up when I got home I did think it looked a bit cheap, certainly rougher than the pieces he'd been waving around smile

Ah well, I washed it off, trimmed it fairly heavily and now 5+ hours in the slow cooker in a red wine/onion/carrot/musrhoom/herb/stock mix should sort it out. Hopefully smile

Out of interest, why do you think eating vegetarian will help with avoiding diarrhoea/food poisoning? I think the issues are more to do with poor hygiene (of the people preparing the food), and cross contamination, more so than the meat itself being bad.

Avoiding fresh food (ie salads etc) is apparently good advice (for obvious reasons I'd hope), although everyone I know who's been more than once reckons that it's only your first visit that is generally bad, you kind of build up an immunity after that.

I will admit to using a very large brush with black stuff on it but having bought from similar a couple of times when a poor student and observed a number of these vans in opperation over the years I have to say I would rather help myself to a slice of road kill.
