I can cook cubed raw pork without browning it first right?

Importantly it would be covered in sauce.

Plan is to just cube it (raw), stick it in the sauce, put it + sauce in oven at 180 degrees for 90 minutes.

It will be okay. Just like a stew or casserole.

Better to sear it first, but by no means essential if you're in a bind.

I'd say that's the best thing to do with diced pork. I find that if you brown it first, it tightens up too much and the flavour of the sauce doesn't get properly into the meat. So putting it straight in the sauce makes the meal more complete, and not just "lumps of meat in a sauce".
