Soften a chopped onion & garlic, add to a pack of mince with an egg, couple of slices of bread (crumbed), teaspoon of cumin, salt & pepper . Mix together with hands and roll into golfball sized balls then chill to ensure they retain shape. Fry gently then add to simple tomato sauce (tinned toms, chopped onion, salt, sugar & worcester sauce) and simmer for short while. You can add chilli into either/both balls or sauce if you fancy. Serve with rice/pasta/potato as you prefer (rice for me). Simples.

Like the suggestions, but if you do go traditional with spaghetti & tomato sauce - try whizzing the tom sauce, adding a good slug of red wine then poaching the meatballs in the sauce - a dollop of cream/creme fraiche towards the end adds a lovely smoothness and as the balls are poached they take on a lovely flavour.

Yum!!

No, I think your mince is too lean. Needs more fat to keep it moist.

Agreed but breadcrumbs do help as it reduces the meat content in the meatball and, as a result, 'softens' the ball. Also, if the meat content is high be carefull not to overcook as this will give you tough balls....

I know I will get shot for mentioning the Swedish furniture giant , but if you like Ikea meatballs make them with half beef and half pork mince and add a few crushed cream crackers and an egg to the mixture as it helps bind it together. For the sauce they use I found adding Bisto gravy granular to boiling milk makes something that is as close as possible without buying their packet sauce. You could add cream if you have some.
