Anyone got any good recipes? Ideally I want to avoid using a stock cube as they're so laden with salt. smile

Boil a chicken carcass with a load of onions carrots and any other suitable veg.

So bring it up to the boil then let it simmer for how long?

Keep the wing tips etc on it when roasting, and if you've any giblets with it, roast those too.

30 minutes should be plenty of time for it to simmer. Leave the lid on.

Freeze the stock and then thaw it in a sieve lined with kitchen towels if you want a clearer result.

Overnight in a slow cooker, a few hours simmering on the hob or a shorter time in a pressure cooker - never tried that last one. Lots of onion, celery, carrots and a bay leaf.

Oh, and don't be squeamish about rescuing leg bones from people's plates, they're going to be boiled.

Slow cooker has been simmering away since 10am with the carcass, two large onions, two large carrots and some pepper corns. It's nearly reduced by half, started off with roughly 4 litres of water in there. Once it's half reduced I'll sieve it off smile
