Has anyone managed to make Nandos style chicken at home that tasted anything like the stuff from the restaurant? No matter which heat level of the marinade I use it never seems to taste quite right. I've seen various recipes from scratch but yet to try any.

I made one taste just like nandos when wasted on tequila.

When I'm not drunk its a lot better.

Yep, nailed Nandos chicken. Unfortunately it requires either a water bath or a steam oven. Basically quarter a chicken and vac pac in a bag with two small bottles of Nandos medium sauce. Then either marinate for two days and steam for 30 minutes or cook straight away in a waterbath for 60 minutes at 75.

Then... fire up your BBQ or grill pan and char grill.

It's actually better than Nandos if you get the BBQ bit right.

I use a Schwartz piri-piri spice shaker thingy, coat small chunks of chicken breast in olive oil and then the piri-piri spice. Either fry or oven bake in foil and then put that in a warm pita bread with iceberg lettuce, mayo and Nando's hot sauce from Sainsbury's. I love it.

We've had some successes - corn fed chicken, a mixture of Nando's extra extra hot spice powder and a bottle of the hot marinade, chicken cleanly trimmed and marinaded overnight. Hot fan oven (250°C, reduced to 180°C). I think that basting is the secret.

Also, a nice salad and some great pitta breads allowed me to make Mrs. SVX's favourite.

I've been googling water baths, and apparently a water container in an oven works just as well - have you tried that method? Also, was it 60 minutes at 75 degrees temperature?

Oooh, that sounds interesting. Would still need to buy some vac packing equipment, it might just be cheaper for me to just go to nandos tongue out

The main thing I've seen at Nandos is most of the sauce is put on just before it comes of the grill.

Oooh, that sounds interesting. Would still need to buy some vac packing equipment, it might just be cheaper for me to just go to nandos tongue out
Yep, 60 minutes at 75 degrees. A big pan of water with a lid on (at around 75) put in an oven at around 75 would be fine. I used to use this method at home before getting a water bath. You still need a cheap vac pac machine for it to work properly though.
