Id be very interested to hear how everyone marinades and prepares their legs of lamb. For the BBQ or oven cooking.

Our most basic but commonly used recipe is simply to cutt deep/thin holes in the lamb, and inserting sharp/pointy slivers of garlic into the holes. The garlic spreads its flavour deep inside the lamb during cooking. Followed by a light salting and sprinkling of rosemary from the garden.

Add sprigs of rosemary to the garlic.

Or put the juice and zest of a lemon and a lime in a jar, add an equal amount of oil and a couple of crushed garlic cloves and a teaspoon of mixed herbs. Shake the jar to emulsify it and pour over.

This for a roast lamb; although I prefer to mash my garlic and anchovy into a sort of paste. Breaks down easier that way.

If its for kebabs etc then different rules apply dependent upon how spicy people like their food.

This thread was inspired by a BBQ sauce marinaded leg (24 hours in the fridge) which was put on a webber for 4 hours at a friends place. Absolutely delish. Different, but still very much lamb!

Green Ginger Wine or Port
Olive Oil
Marmalade
Green Herb Pesto
Worcester Sauce
Wholegrain Mustard
Tomato Sauce
Garlic Paste
Ginger Paste
Chilli Sauce
Mint Sauce
Ground Pepper and Salt
Fresh Rosemary or Thyme
