I have always made a very simple chilli - onion, garlic, mince, chopped tomatoes, sugar, cumin, coriander, garam masala, kidney beans, and mixed herbs. It usually works very well, but I am planning to experiment tonight.

A quick Google search revealed this:

Now, people seem to like it, but I am sceptical. Coffee, beer, and coca - really? Not going to bother with beef sirloin as well as the standard mince, which I assume will be fine. Also, I don't have any cayenne kicking about - I assume normal chilli flakes will do fine. And beef broth = beef stock cube, correct?

Anyway, does the PH massive have anything more to add, or a better recipe? The last time I came on here looking for help with cooking I was rewarded with several fantastic recipes which I was extremely happy with and have used several times since, so maybe it is worth asking again!

try adding a few squares of high percent dark chocolate an a splash of JD.

but you really should add a nice bit of chilli heat of some sort, its not called a chilli for nothing.

Dark chocolate and JD are a good shout - I have plenty of both so will pop some of that in!

Still not convinced about the coffee and the dark beer, perhaps I will just modify my existing recipe and throw some in anyway.

Plenty of chilli flakes / powder goes in, so it usually does have a nice kick to it! smile

I find cayenne really does add quite a bit to chilli - its heat and flavour come in more progressively and after the main chilli hit, which makes the dish more interesting. Likewise a bit of tabasco doesn't hurt either.

That said, both of the above are banned if Mrs LT is eating it.

Always aim to make too much chilli too. It freezes really well for future use as quick ready meal.

Do you not use fresh chillis? I like to pop a few in, only roughly sliced so that if they're a little overwhelming they can be left on the side of the plate, or if you're double-hard cut them up on your plate and mix 'em in. lick

I've taken to making my Chilli with Pasata rather than tins of tomatoes. You end up with a lovely thick paste of a chilli.

Always add a bit of palm sugar to mine.

Agree with the passata comment, also will use diced skirt of beef as well as mince.

NEVER put sweetcord in anything! Totally pointless food.

The difference being your chilli ends up with a tin full of pie-key beans in it? My sister did this once, it was the unmistakable taste of disappointment. Probably wasn't the fault of the beans to be fair, but the link has been made.

Flakes?! Powder!? BAH, HERESY I SAY!

It's got to be fresh chillis or nothing - I go for a large amount of mild chillis for flavour and scotch bonnets for heat. Freshly ground cumin as well if you can be arsed.

The dark chocolate is a very good call, makes it lovely and silky.

One of the kids keeps moaning about my chilli which everyone else appears to like but now I just use the pre-sorted herbs and spices in a packet and now she loves it.

Fantastic, looks like I have a bit of experimenting to do!

I made the "Jailhouse Chilli" from the other thread posted above last night, great success. Guinness was the beer of choice which I found to work quite well. I was surprised to see that coriander and garam masala were not included, and the recipe said to use a very small amount of cumin. I only used mince, no sirloin (I am a student) but it was still very tasty.

Fresh chilies from the coop worked well, but I think I need to source some better ones. The best part? I made far too much so I will be having it for lunch tomorrow lick

I shall try the other recipes in this thread over the next couple of weeks and let you all know how I get on smile
