Leftovers=stuffed peppers

Didnt get in till 9 tonight from work and had some left overs to use up, so being new to this cooking lark had a quick look online for inspiration.
So, just had stuffed red peppers.
Used up the spicy sausages I had left aswell as rice, some garlic, onions, chopped parsley, a touch of paprika and a dash of white wine all thrown into the mix, topped off with some grated cheese.
I know it's a dead simple dish, but it turned out bloody lovely smile

Sounds really good and I did a very similar thing as I got 6 massive mixed peppers for £1, bargain.

Mine were stuffed with cheddar cheese at the bottom then a mix of spiced cous cous, mushroom, carrot, garlic, herbs and then topped (I did them in halves this time) with breadcrumb mix (crumbs+ salt, pepper, paprika, parmesan and a bit of butter).

They were lovely, great way to use up random things you've got in the fridge. Would have loved to chuck some chorizo or bacon in but was cooking for a veggie so didn't really work smile

Cous cous was this stuff which I'd very strongly recommend (giant tub from CostCo):

i think i'll try your breadcrumb mix next time aswell.
the peppers have served us well, got a load last weekend at the farm shop, and used the lot in a variety of dishes. they went down well tonight, everyone is asking me at home what i'm doing next?
i'm not sure realy, got some chicken drumsticks in the fridge so thinking some sort of sweet, sticky marinade for them, and something to go with it smile
