It should be so easy, but for some reason my roast parsnips come out either burnt to a cinder or limp and greasy.

How do you guys do yours?

Burnt! The crispier the better in this household!

Par boil until just starting to go tender. Drain. Leave for 5 minutes. Toss in seasoned flour. Toss in finely grated Parmesan.

Into roasting tray with olive oil for half an hour.

Love roast neeps. Tend to have a bowl on hand if me and the wife are watching a film as healthier than chips.

Mine tend to be a bit over done, but really nice. For me, the trick is to put them in the oven straight away as the oven getting up to temp seems to cook them through better without burning them, I also put a splash of balsamic over them, don't know if it does anything, but they taste nice!

They are lovely things parsnips. For some reason we probably have them about twice a year. I'm certainly going to try the Parmesan method as it can't fail really!

I can taste Christmas dinner already.

We used a 200 C oven then a forgotten visit to the pub. I'll try and revise the strategy next time.

After years of experimentation: Aunt Bessies frozen take all of the stress away. Just keep an eye on them to prevent burning.
