Fondu. Anyone do them?

My wife and I are well in to these. Inherited a couple of fondu pots (is that what they're called).
Simple recipie
Rub a garlic clove round the pot and discard.
On a low heat add about a glass of dry white wine. A good one cos that's what you'll taste.
Grate 200g ish of gruyere and 200g emmentale
Toss the grated cheese in a little corn flour about half tea spoon.
Add to the pan and wait and wai and wait. Takes about half hour to melt totaly. Add nutmeg to taste if you wish.
Eat!

I bought a litre in Switzerland. It lasts a while.

You use stock instead of oil. Cooks the meat nicely and is a bit less greasy.
Once all the meat is cooked you can serve up the stock in soup bowl, with a shot of brandy in each.

Oh - and
again. There is a theme with fondues.
I haven't had a fondue for years. I'll do something about that very soon.
Has anyone tried a fish fondue? I was thinking about using oil, and then having chunks of white fish, haddock and/or monk, salmon, tuna, prawns and possibly a few scallops, boiled new potatoes, salad, and then a few sauces for dipping, like Marie-rose, chilli lime & ginger, and one with dill possibly.
Any suggestions are most welcome.

We have an electric fondue, more than enough power to heat the oil and maintain the temp.
Also have part cooked potato wedges to cook along side the meat
