Make sure that you eat and drink (lots) at the Half Moon Brewery. This is walking distance from the town centre.
Fresh beer served in gigantic glasses. I loved it.
The resteraunt there is excellent too.
I would also recomend Dumon chocolate shop. Its located in a twisted old cottage. Really lovely gifts and chocholates in there.
It is mandatory to try the Moules Mariner there too, these are two a penny on the streets. Whilst there, Chips with mayonaise and chantilly waffles.

Have eaten in Bruges many times - trouble is I drank quite a bit too and have forgotten most of the restaurant names. This one is worth a visit http://www.dengoudenkarpel.be/ Be careful though, we reckon our credit card was cloned in one of the restaurants in the square to the tune of £100 - all recovered. There are plenty of places selling a huge variety of beers, many (IMO) better than the Half Moon Brewery's though the brewery tour is interesting enough.

I'm over there this weekend too. I'm a big fan of the brewery - if you like any of their beers go in the shop and buy by the crate - it's cheap as chips (barely a euro a bottle for the zot blonde which is my standard quaffing beer). Also the 'beer wall' is good for buying bottles as they stock everything you can imagine including the mandatory matching glassware.

I was on holiday in Bruges last year and can think of two standout places to go
In't Nieuw Museum-Small restaurant located in a residential neighbourhood. Focuses on meat, went twice on a four night holiday, steak was definatley in the top 3 of what Ive ever had. Next time had ribs, awesome, but preferred the steak.
Bar cambrinus- just off the main square, good food and a selection of 400 beers, the beer menu is the size of a phonebook.

Den Dyver is probably one of the "top end" places to eat, I've not been there personally but it has a good reputation. You'll need to book ahead though.
We ate at De Stove which was lovely. It's quite small so you should book in advance if you want to be sure of a table.
And I can also recommend Dumon chocolates - I tried a lot and they are the best!! (if you like florentines, their ones are lovely - in fact, my mum was there on Tuesday stocking up for me!)
