Both my sisters and my missus are veggies. It's a goddamn pain in the arse but what can you do. I make them a simple vegetable puff pastry tart. Just a rectangle of puff pastry, cooked so it rises and then push in the middle of it so it's got a 'lip'. Fry some veg, pepper, courgette, that kind of stuf and pile it in the case. Oven bake to finish it off.
Assuming you are willing to make the effort and cook something for her, then I would probably go with something pastry based.
Perhaps a brie, cranberry and veg filo parcel or puff pastry mushroom tart using some of the exotic mushrooms to pep the flavour up?
That sort of dish will go well with the usual veg and trimmings from christmas dinner. Though remember to do her spuds without goose fat etc.
