Margarita recipes

Adapted from the Speakeasy cocktails iPad app.
A couple of points to note:
If you are entertaining have a least 2 shakers. There is nothing worse than people hanging around while you faff around in the kitchen.
It's also worthwhile finding a shot glass with ounces rather millilitres. You'll see why after 2 or 3 drinks.
2 oz tequila (good quality only)
¾ oz Cointreau
¾ oz fresh lime juice (don't use the bottled stuff)
¼ oz agave nectar (if you can find it, I use sugar syrup)
1 lime wheel
kosher salt
Rims chilled glass with salt, put the liquid ingredients in a shaker with big ice cubes if you can get them, give it hell for about 15 seconds. Strain into chilled glass through a tea strainer to remove little bits of ice.
Garnish with lime wheel

Spent more weeks in CA over the last two years than I wish to rememeber, but one fond memory is the Cadillac Margaritas made by the barmaid in my hotel.
I had a "free drink" coupon for each day of my stay (so had loads), which were worth up to $15 and she made sure I got the full $15 worth.
Had them both ways with crushed ice or just shaken with ice then drained - the crushed ice ones gave me ice cream headaches so were taken less often.
Anyway I think the recipe was simply:
A good Tequilla - my preference was Patron Anejo
Fresh sweet and sour
Ice
Pour into Glass, then the "Cadillac", a very large measure of Grand Marnier poured on top.

Use a quality 100% Agave Blanco tequila (i.e. not Jose Cuervo). Use fresh lime juice, never pre-mixes (they taste sweet and artificial), drop the Triple Sec and serve on the rocks, not blended.

3/4 oz agave nectar (you can get in the health foods sections of most supermarkets, as its a diabetic-friendly sweetener)
1oz fresh squeezed lime juice
shake hard, then strain in to a rocks glass which you have coated the rim with chilli powder and salt.
Use a quality 100% Agave Blanco tequila (i.e. not Jose Cuervo). Use fresh lime juice, never pre-mixes (they taste sweet and artificial), drop the Triple Sec and serve on the rocks, not blended.

There's a much better way to drink Tequilla in my opinion ..... Sangrita

Second one is a VERY spicy tomato juice shot.
The second shot can also be an orange juice version, but I prefer the tomato based one.
The recipe below is pretty much what I was drinking in the bar in my Hotel whilst in the US, with the Tequilla "shots" being more like a UK Triple Measure in a Whisky tumbler
