Turkey cooked Heston style?

I have slow cooked a chicken from Hestons 'at home' book and it was great, can i repeat the same process for Turkey (3-4kg) ?
Or would it be unsafe for some bacterial reason?
How long do people think it would take, i was thinking 6-7 hours?
Any other ways to stop it from drying out?
I will brine it regardless the night before to help

We had a few attempts at cooking chicken Heston style, we were wary of cooking it at a low temperature too. After experimenting a few times we came to the conclusion that it was the brining (sp) rather than cooking at low temperature that made the most difference in terms of moistness (never thought I'd write that on pistonheads).

We're going to brine it the night before and then cook in a conventional way.

I've brined ours for the last few years and I find that it takes less time to cook.

ears Really? I will remember that, perhaps check it a little earlier with the thermometer. Thanks for the tip!

Thanks for that, I think i will brine it, then try the slow cook, but as its around 3-4 kg in size not sure how long, if we run out of time I will just ramp up the heat as normal to get it cooked so we dont sit down for lunch at 8pm wobble

Did the Nigella recipe a couple of years back where you leave it in a spiced cold water for two days before cooking. It was fantastic.
