Hi people,

I got a Gressingham goose half price at work today, so we decided to have that tomorrow instead of turkey.
I've eaten goose twice at my aunties, both times it turned out different. I followed the instructions, prick :-), salt, pepper, oil, take fat from cavity and cover legs, 3 hrs 30 mins for 6kg bird, baste every hour. Wish me luck.

Yeah you'll be ok.
I only sold one this year ,I'm thinking people are not spending like
they once did.

We're on goose for the third year, the whole family love it. Your cooking method is sound.

I get to choose the xmas meat every other year - in theory.

£53 goose sitting downstairs - and I don't even have to cook it as my OH is the cook.

O/T but last year we had an Aylesbury Duck which wasn't dissimilar, very fatty dark meat, could quite happily give up goose for this tbh.

I tried a method last year where you seperate the legs and put them in an hour later. Different cooking times. Worked well. Remember to drain off some fat for the roasties. Enjoy!

We are going to friends tomorrow and goose is on the menu. This was the beast two days ago with the legs off ready to confit.

3hrs and it was done, tasted similar to lamb, very good quality. well chuffed
