I rely heavily on mushroom stuffing and bacon to either 'pad out', or 'hide' my mistakes.
A good slew of chopped herbs on top of the dish before carving also works wonders

I've a pheasant to gut and cook boxing day 
cook breast down in a roasting dish for 1 hour at 180C or 160 in a fan oven.
I use an overripe granny Smith to keep it moist and 3 segments of said apple to make a triangle to keep the bird from toppling over. mash the apple bits at thye end to make a great gravy.
