I'm sure someone must done this but it'll be new to me when I try it tomorrow.

Fry off some shallot in a little olive oil, add some finely chopped saucisson sec, season, rosemary, little balsamic vinegar, reduce, add stock and red wine.

A simple shallot/red wine sauce plus saucisson.
