Butterfly, then cut in to thin strips about 6cm long.
Marinate overnight in soy, garlic granules, ginger, chilli sauce, black pepper and a little sugar and vinegar.
Stir fry for around 4 minutes on high heat and then add three tablespoons of sesame seeds, a finely chopped red chilli and shredded spring onion.
Serve with rice and vegetables.
Any good?

Ingredients

1 tbsp olive oil
*
1 onion, finely chopped
*
1 garlic clove, crushed
*
450g/1lb chicken mince (wizz chicken breast up in blender)
*
1 bird's eye chilli, chopped
*
½ tsp paprika
*
½ tsp ground cumin
*
1 tbsp chopped fresh parsley (or corriander)
*
salt and freshly ground black pepper
Wizz everything up in a blender form into sausage shapes and fry. Serve with salad and pitta bread add some hot sauce for a bit of heat.

I made a chicken pie this morning. Random assortment of vegetables from the fridge, poach the chicken, add veg, drain water off to make gravy, then put in pastry and cook for about 30 mins in the oven. I didn't get the pastry quite right but not bad for a first attempt.

Breakfast?Veering off topic a bit but chicken has absolutely no place on the breakfast table. Pork, beef or even fish are fine. Chicken definitely not.

Freeze a stick of garlic butter.
Stick a slim knife info the breast from the fat end.
Poke the stick of garlic butter inside.
Dunk in oil, then Paxo breadcrumbs.
Oven bake, 25mins, don't try to turn it over.
